If you don’t want to take the time to make the caramel sauce, these yummy fritters are also delicious dusted with confectioners’ sugar.

3 ripe bananas, mashed

2 tablespoons pure maple syrup

2 tablespoons sugar

1⁄3 cup plain or vanilla soy milk

2⁄3 cup all-purpose flour

1⁄2 teaspoon ground cinnamon

1⁄4 teaspoon salt

2 teaspoons baking powder

1 tablespoon vegan margarine, melted

Canola or other neutral oil, for frying

Caramel Sauce, homemade or store-bought

  1. In a large bowl, combine the bananas, maple syrup, sugar, and soy milk. Stir in the flour, cinnamon, salt, and baking powder, then mix in the margarine until well blended.
  2. In a large skillet, heat a thin layer of oil over medium-high heat. When the oil is hot, carefully place spoonfuls of the banana mixture into the skillet. Do not crowd. Fry until golden brown on one side, then turn and fry the other side, about 6 to 8 minutes total. Drain the cooked fritters on paper towels.
  3. Arrange the fritters on dessert plates and drizzle with caramel sauce. Serve warm.

Variation: Use another fruit to replace the bananas: try 3 apples or ripe pears, peeled, cored, and shredded; or 2 ripe mangoes, peeled, pitted, and finely chopped.

This tasty pie is not only delicious and healthful but it’s also a great way to use a bunch of ripe bananas.

11⁄2 cups vegan vanilla cookie crumbs

1⁄4 cup vegan margarine, melted

1 cup mango juice

1 tablespoon agar flakes

1⁄4 cup agave nectar

4 ripe bananas, peeled and cut into chunks

1 teaspoon fresh lemon juice

1 fresh ripe mango, peeled, pitted, and thinly sliced

  1. Grease the bottom and sides of an 8-inch pie plate. Place the cookie crumbs and the melted margarine in the bottom of the pie plate and stir with a fork to combine until until the crumbs are moistened. Press into the bottom and sides of the prepared pie plate. Refrigerate until needed.
  2. Combine the juice and agar flakes in a small saucepan. Let it sit for 10 minutes to soften. Add the agave nectar and bring the mixture just to a boil. Reduce the heat to a simmer and stir until dissolved, about 3 minutes.
  3. Place the bananas in a food processor and process until smooth. Add the agar mixture and lemon juice and process until smooth and well blended. Use a rubber spatula to scrape the filling into the prepared crust. Refrigerate for 2 hours or longer to chill and set up.
  4. Just before serving, arrange the mango slices in a circle on top of the pie.

This yummy pudding made with orzo, the tiny rice-shaped pasta, makes an interesting change from rice pudding. For added banana flavor, just before serving, thinly slice an additional banana and stir it into the pudding or use to garnish the top of the desserts when spooned into individual dessert dishes.

2 ripe bananas

1 cup plain or vanilla soy milk

1⁄2 cup sugar

11⁄2 teaspoons pure vanilla extract

1⁄2 teaspoon ground cinnamon

Pinch salt

21⁄2 cups cooked orzo

1⁄2 cup toasted sliced almonds

  1. In a blender or food processor, combine the bananas, soy milk, sugar, vanilla, cinnamon, and salt and blend until smooth.
  2. Transfer the mixture to a medium saucepan and bring almost to boil over medium-high heat, stirring to dissolve the sugar. Add the cooked orzo and simmer over low heat for 20 minutes, or until desired consistency is reached, stirring occasionally. Set aside to cool.
  3. Transfer the pudding to a bowl, cover, and refrigerate until chilled. Garnish with almonds. Serve warm or cold.

Inspired by the classic New Orleans dessert Bananas Foster, this dessert tastes as impressive as it looks (especially when nestled with a scoop of vegan vanilla or pecan ice cream), but it couldn’t be easier to make thanks to using store-bought puff pastry. It is a boon to vegans that Pepperidge Farm puff pastry sheets, found in supermarkets everywhere, are vegan.

2 tablespoons vegan margarine

1⁄2 cup light brown sugar

¾ cup chopped unsalted pecans

3 ripe bananas, sliced

2 tablespoons rum or 1 teaspoon rum extract (optional)

1⁄2 teaspoon ground cinnamon

1 sheet frozen puff pastry, thawed

Sugar, for rolling and dusting pastry

  1. In a large skillet, melt the margarine over medium heat. Add the brown sugar and stir to blend. Add the pecans and bananas and cook for 1 minute, stirring to coat. Add the rum, if using, and the cinnamon and stir to combine. Remove from heat and set aside to cool.
  2. Roll out the puff pastry on a lightly sugared work surface to eliminate the creases in the pastry.
  3. Spread the cooled banana mixture down the length of the pastry. Fold the sides of the pastry over the banana mixture and tuck in the ends, sealing the edges with your fingers.
  4. Place the strudel on an ungreased baking sheet and cut a few diagonal slashes on top of the pastry with a sharp knife to allow steam to escape. Sprinkle a little sugar on the top of the strudel and refrigerate for 15 minutes. Preheat the oven to 400°F.
  5. Bake the strudel until golden brown, 35 to 40 minutes. Cool for 10 minutes. Use a serated bread knife to cut into slices and serve.

This cake can be enjoyed as is or frosted with the tofu “Cream Cheese” Frosting. My favorite way to serve it, however, is drizzled with the warm Blueberry Sauce.

2 cups all-purpose flour

21⁄2 teaspoons baking powder

1⁄2 teaspoon ground allspice

1⁄2 teaspoon ground cinnamon

1⁄2 teaspoon salt

3 ripe bananas

1⁄2 cup plain or vanilla soy milk

1⁄4 cup canola or other neutral oil

¾ cup sugar

2 teaspoons pure vanilla extract

1⁄2 cup chopped walnuts

  1. Preheat the oven to 350°F. Grease an 8-inch square cake pan and set aside.
  2. In a large bowl, sift together the flour, baking powder, allspice, cinnamon, and salt and set aside.
  3. In a food processor or blender, combine the bananas, soy milk, oil, sugar, and vanilla and blend until smooth. Add the wet ingredients to the dry ingredients and stir until just moistened. Do not overmix. Fold in the walnuts.
  4. Scrape the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Allow to cool in pan for 10 to 15 minutes before inverting it onto a wire rack to cool completely before slicing.
